羊腩煲是香港流行且常见的毀式美食,而阿广羊腩煲则是大马备受喜爱的羊腩煲餐厅。
KCK集团董事经理李志强受访时指出,阿广羊腩煲冀能给予顾客一种穿越到香港打边炉的用餐体验,既亲切又溫暖,真切地感受港式独特风情。
他指出,该店最受欢迎的羊腩煲跟香港羊腩煲的不同则在于它融入了大马的独特风味和特色,并注重于汤底本身。
他说,大马人似乎对喝汤这件事情有独锺,在享用汤料理时,往往都会先喝上一口汤,品尝汤底本身的滋味。汤底是食材萃取浓缩后的精华,也成为一种讲究,是多数大马人内心奠定一道菜给予他们第一印象的关键。
李志強指出,阿广羊腩煲坚持使用自家独特秘方,即30公斤的上等羊肉和30多种药材及香料,以4至5小时的时间慢火熬煮汤底。同时,熬出的原汤少中不添加水与任何味精,如此一锅浓郁醇厚的阿广羊腩煲汤底才真正熬制而成。
阿广羊腩煲的招牌菜式,即阿广经典羊腩煲和首创麻辣羊腩煲,皆使用相同的汤底制成。前者保留经典汤底浓厚的药材香味;后者则在经典汤底的基础上增添麻辣的咸香辣味。不仅如此,该店更提供无限且免费续汤的服务,给予顾客十足的满足感。
而阿广羊腩煲亦是一间最多羊肉食材的羊腩煲店,包括劲补羊蹄子、脆口羊毛肚、肉筋羊腱子、极品羊脖肉及必吸羊大骨等。作为阿广羊腩煲主要食材的羊肉,则使用来自澳洲进口的小羔羊,因此肉质更为鲜嫩。
除了羊腩煲,阿广羊腩煲更有其他菜式供顾客选择,目前新推出的菜式就包括香港大猪骨煲、行运一澳龙虾煲及海南椰子走地鸡煲。而这些全新菜式目前只有在云顶推出,并在未来将会陆续带入和推行至其他分行。
李志強透露,集团的坚持在于对食材品质的注重和诚意,并对不同食材采用不同且最适合的煮法进行烹煮。因此,该店不采用任何加工食材,选择以纯手工的方式自制食材展现诚意,让食客享受食材最原始、最纯正的本味。
他说,手切羊肩肉便是以手切的方式一层层地切成肉片,肉质顺滑鲜嫩,也是招牌菜式以外最受欢迎的菜式。而不选择使用机器切肉片的原因在于, 机器所切出来的肉片太过整齐反而缺乏口感,手切肉片则会相较于前者来得口感丰富。
该店其他自制食材还包括自制黑毛猪培根午餐肉片、手打黑金墨鱼丸及手打羊肉丸等;更备有创意的羊肉特色小吃,如网红肚包肉、四川麻辣羊杂及肉筋羊腱子等,并可搭配阿广羊腩煲店内全天然自制的腐乳酱。

In addition on selling lamb pot, there are other dishes for customers to choose from. The new dishes currently launched include Hong Kong Pork Bone Pot, Lucky Australian Lobster Pot and Hainanese Coconut Village Chicken Pot. These new dishes are currently only available in Genting Branch, and will be introduced and promoted to other branches in the future. Our managing director revealed that the group's persistence lies in the emphasis and sincerity on the quality of ingredients, and the use of different and most suitable cooking methods for different ingredients. Therefore, the store does not use any processed ingredients, and chooses to use handmade ingredients to show its sincerity, so that diners can enjoy the most original and purest taste of the ingredients. Hand-cut lamb shoulder is cut into slices layer by layer by hand. The meat is smooth and tender, and it is also the most popular dish besides the signature dish.
